"We serve this rice dish with several of our favorite entrees, as the coconut flavor is very subtle. We prefer using Jasmine rice because it has a delicate purfume quality. Hints of coconut & flowers, what could be more Caribbean?

Favorite Tropical Side Dishes



Coconut Rice
Preparation Time: 5 minutes
Total Time: 25 minutes
Flavor: Tropical
Serves: 4
14 ounce Jasmine rice, (2 cups)
1 cup water
16 fluid ounce canned unsweetened coconut milk, (2 cups); well stirred
1/2 teaspoon salt
2 teaspoon granulated sugar

Wash rice in several changes of cold water until it runs clear. Place water, coconut milk, salt and sugar in a heavy saucepan. Add rice, cover and bring to a boil. Reduce heat to low and simmer for 15 to 20 minutes until rice is tender. Turn off heat and allow rice to stand for 5 minutes more. Fluff and serve.

Chef's Notes:
This is a lovely twist on plain rice - a great tropical side dish for grilled fish, chicken or pork.
