| Triple Citrus Cheesecake |

32 ounces cream cheese, room temperature
1 cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon pure vanilla extract
1 fresh lemon, half zested to yield 1 teaspoon and squeezed to yield 1 tablespoon of juice (remaining half sliced thin for garnish)
2 fresh limes, one zested to yield 1 teaspoon and squeezed to yield 1 tablespoon of juice (remaining lime sliced thin for garnish)
1 navel orange, half zested to yield 1 teaspoon and squeezed to yield 1 tablespoon of juice (remaining half sliced thin for garnish)
4 eggs
1 graham cracker crust
Preheat oven to 325 degrees.
Beat cream cheese with an electric mixer, add sugar, flour and vanilla, blend well.
Blend in juices and zests. Add eggs, one at a time; mixing at low speet after each addition, until blended.
Pour filling into crust. Bake for 60 to 65 minutes.
Cool to room temperature and refrigerate for 4 hours.
To serve, slice cake into 8 wedges and arrange a slice of fruit decoratively on top of each piece.
Chef's Notes:
We prefer to make the graham cracker crust from scratch (follow the preparation directions on the graham craker crumb box), but you can save time and effort by purchasing a pre-made shell in the baking aisle of your grocery store.
