"There are never any leftovers when we make this lovely, refreshing mousse dessert! We serve the mousse in a fun margarita glass with a sugar-coated rim and a lime garnish. A perfect ending to a perfect Caribbean day!"

White Chocolate Margarita Mousse
Preparation Time: 10 minutes
Total Time: 30 minutes, plus 1 hour to chill
Flavor: Tropical/Mexican
Serves: 6
2 egg
2 egg yolk
2/3 cup granulated sugar
5 fresh lime, 1 zested to yield 1 tablespoon; 4 juiced to yield 1/2 cup of juice; 1 reserved for garnish
2 tablespoon tequila
3 ounce white chocolate, chopped
6 fluid ounce whipping cream, (3/4 cup)

Whisk together eggs, egg yolks, sugar, lime rind and juice, and tequila in heatproof bowl set over a saucepan of hot (not boiling) water; cook, whisking often, until thickened and mixture falls in ribbons when whisk is lifted, about 8 minutes. Remove from heat.

Add white chocolate; stir until melted. Pour into clean bowl; place plastic wrap directly on surface. Refrigerate until chilled, about 1 hour. (Can be made 3 days ahead, covered and refrigerated.)

Whip cream in a bowl; fold half into lime mixture. Fold in remaining whipped cream just until combined. Spoon into sugar-rimmed margarita or martini glasses and garnished with thinly cut lime wedges or slices. (Can be made 2 days ahead, covered and refrigerated.)
