Favorite Tropical Appetizers



Hawaiian Pork Quesadillas
Preparation Time: 20 minutes
Total Time: 25 minutes
Flavor: Tropical
Serves: 8
8 7- to 8-inch-diameter flour tortillas
4 ounces garlic-herb flavored soft cheese, such as Boursin cheese
3/4 pound cooked pork; shredded to yield 2 cups
2 fresh mango, small; peeled and flesh finely chopped to yield 2 cups
1 fresh jalapeno chili pepper, finely chopped
1/2 cup fresh cilantro leaves, chopped
2 ounces Pecorino Romano cheese, grated to yield 1/2 cup

Spread tortillas with the Boursin cheese.

Place 4 in a nonstick skillet; top each with pork, mango, jalapeño, cilantro and Romano. Top with remaining tortillas, Boursin side down.

Cook 2 minutes per side or until crispy and warm. Cut into wedges to serve.
