Favorite Tropical Appetizers



Shrimp with Two Dipping Sauces
Preparation Time: 15 minutes
Total Time: 20 minutes
Flavor: Asian/Tropical
Serves: 8
36 cooked medium shrimp
2 fresh limes, squeezed to yield 1/4 cup
2 tablespoons rice vinegar
1 tablespoon low-sodium soy sauce
2 1/2 teaspoons granulated sugar
1 tablespoon water
2 teaspoons fresh gingerroot, grated
2 teaspoons fresh cilantro leaves, minced

14 fluid ounces apricot jam, (1 3/4 cup); melted
2 tablespoons low-sodium soy sauce
3 tablespoons scallion, minced
1 tablespoon fresh lime juice
1 dash hot pepper sauce

Coriander Dipping Sauce: Whisk together 1/4 cup lime juice, vinegar, 1 tablespoon soy, sugar, water and ginger. Whisk in coriander just before serving. Makes about 1/2 cup.

Apricot Dipping Sauce: Whisk jam, 2 tablespoons soy sauce, scallions, 1 tablespoon lime juice and tabasco together. Makes 2 cups.

Serve cold cooked shrimp with dipping sauces.
