"We have made this entree several times for guests who like food with spice! We typically serve the steak sliced and fanned out a bit. The Coconut Rice and Avocado Salad are lovely, refreashing compliments to the spicy adobo flavor.

Grilled Tuna Steaks Adobo
Preparation Time: 15 minutes
Total Time: 25 minutes

1 1/2 teaspoon coriander seed, toasted and ground
1 teaspoon ground ginger
1 1/2 teaspoon dried hot red pepper flakes
1 1/2 teaspoon turmeric
1 1/2 tablespoon dry mustard
1 1/2 teaspoon nutmeg, freshly grated
1 1/2 teaspoon ground allspice
1 1/2 teaspoon cayenne pepper
1 1/2 teaspoon black pepper
1 tablespoon coarse salt
1 tablespoon sweet paprika
1 1/2 tablespoon dried orange peel
1 tablespoon granulated sugar
4 tuna steak, 6-ounces each
2 fluid ounce vegetable oil (1/4 cup)

Mix all of the spices ingredients together in a bowl. Rub each of the tuna steaks with 1 1/2 teaspoons of the oil and sprinkle generously with the adobo. Cook on an oiled grill rack for two to three minutes per side, making sure there is enough heat to sear it quickly.

Chef's Notes:
You can prepare the spice mix several days in advance; store in a tightly sealed jar.

We recommend serving this with Coconut Rice and Avocado, Hearts of Palm and Red Onion Salad with Coriander Vinaigrette. Yummy!
