Gooey Banana Bars
These gooey banana bars are gluten free and made with no refined sugar! If you are looking for an easy meal prep option for breakfast, a quick snack during the day or something delicious for your next weekend brunch… you MUST try these!
What You Need:
Wet Ingredients:
- 4 tbsp softened grass-fed butter or coconut oil 
- 1/4 cup pure maple syrup 
- 2 eggs 
- 3/4 cup greek yogurt (unsweetened or vanilla, no added sugars) 
- 3 bananas (preferably ripe) 
- 1 tsp vanilla extract 
Dry Ingredients:
- 2 cups oat flour (I used Bob’s Red Mill) 
- 1/4 cup dark chocolate chips (I used Enjoy Life Chocolate Chips) 
- 1/2 tsp cinnamon 
- 1 tsp baking soda 
- 1 tsp baking powder 
- 1/4 tsp salt 
The Frosting:
- OPTION 1: Coconut Cream Frosting - 1 can coconut cream (13.5 oz can) 
- 1/3 cup creamy nut butter (all-natural, I like 100% peanuts or anything with ingredients = only nut of choice + optional salt) 
- 2-3 tbsp pure maple syrup 
 
- OPTION 2: Greek Yogurt Frosting - 1/4 cup greek yogurt (unsweetened or vanilla, no added sugars) 
- 2 tbsp creamy nut butter (all-natural, I like 100% peanuts or anything with ingredients = only nut of choice + optional salt) 
- 1 tbsp pure maple syrup 
- 1/4 tsp vanilla extract 
 
How To Make:
- Preheat oven to 350F. Prepare 9x13 pan with olive oil or butter. Set aside. 
- Mix wet ingredients. In a bowl with hand mixer or use food processor (I used food processor - but either will work), mix together wet ingredients slowly till fully combined and fluffy. 
- Slowly add in dry ingredients and mix until fully combined. 
- Pour battered into prepared pan and spread out evenly. Bake for 30-32 minutes or until tops/edges begin to get golden brown, top begins to crack, or toothpick comes out clean. 
- Once done, let cool and start making the frosting. Can pick either frosting option or do both and let your guests choose! - To make frosting - simply throw all ingredients into a bowl and mix until combined. 
 
- Top banana bars with frosting option of choice or store frosting separately and spread on when you’re ready to eat! 
- ENJOY :) 
Extra Notes:
- Store on countertop for 1-3 days and then in the fridge so bars stay fresh and yummy!
