The Most Delicious Monster Cookies
A perfect mix of almond flour and rolled oats for an amazing texture. Plus these gluten free monster cookies are naturally sweetened with honey and have all the chocolate & peanut butter sprinkled into each bite.
Wet Ingredients:
- 2 eggs 
- 1/4 cup honey 
- 3/4 cup natural peanut butter 
- 3 tbsp melted coconut oil (can swap for melted butter) 
- 1 tsp vanilla 
Dry Ingredients:
- 1 cup almond flour (I used Bob’s Red Mill Super-Fine Almond Flour) 
- 1/2 cup whole rolled oats (I used Bob’s Red Mill GF Old Fashioned Rolled Oats) 
- 1 tsp baking soda 
- handful chocolate chips (use as much or as little chocolate as you like - depends what you prefer) 
- handful of Christmas colored m&m’s 
INSTRUCTIONS:
Step 1. Set oven to 350 degrees F and line baking sheet with parchment paper.
Step 2. Mix together wet ingredients in a bowl. In another bowl, stir together dry ingredients.
Step 3. Add the dry ingredients to the wet ingredients until fully combined. Then fold in most of the chocolate chips and m&m’s - set some aside if you want to sprinkle on top.
Step 4. Scoop about 1 tbsp of the batter onto the baking sheet in rounded balls. Then gently flatten/press the cookies down. Top with some extra m&m’s if you want.
Step 5. Bake cookies for about 10-12 minutes or until edges are barely golden brown. The trick is to slightly under-bake them so they stay nice and gooey and soft! ;) They will settle and firm up as they cool. Allow the cookies to cool for about 15-20 minutes! Store on counter for 1-2 days & then freeze them if you want!
