Gooey Banana Bars

These gooey banana bars are gluten free and made with no refined sugar! If you are looking for an easy meal prep option for breakfast, a quick snack during the day or something delicious for your next weekend brunch… you MUST try these!

What You Need:

Wet Ingredients:

  • 4 tbsp softened grass-fed butter or coconut oil

  • 1/4 cup pure maple syrup

  • 2 eggs

  • 3/4 cup greek yogurt (unsweetened or vanilla, no added sugars)

  • 3 bananas (preferably ripe)

  • 1 tsp vanilla extract

Dry Ingredients:

  • 2 cups oat flour (I used Bob’s Red Mill)

  • 1/4 cup dark chocolate chips (I used Enjoy Life Chocolate Chips)

  • 1/2 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

The Frosting:

  • OPTION 1: Coconut Cream Frosting

    • 1 can coconut cream (13.5 oz can)

    • 1/3 cup creamy nut butter (all-natural, I like 100% peanuts or anything with ingredients = only nut of choice + optional salt)

    • 2-3 tbsp pure maple syrup

  • OPTION 2: Greek Yogurt Frosting

    • 1/4 cup greek yogurt (unsweetened or vanilla, no added sugars)

    • 2 tbsp creamy nut butter (all-natural, I like 100% peanuts or anything with ingredients = only nut of choice + optional salt)

    • 1 tbsp pure maple syrup

    • 1/4 tsp vanilla extract

How To Make:

  1. Preheat oven to 350F. Prepare 9x13 pan with olive oil or butter. Set aside.

  2. Mix wet ingredients. In a bowl with hand mixer or use food processor (I used food processor - but either will work), mix together wet ingredients slowly till fully combined and fluffy.

  3. Slowly add in dry ingredients and mix until fully combined.

  4. Pour battered into prepared pan and spread out evenly. Bake for 30-32 minutes or until tops/edges begin to get golden brown, top begins to crack, or toothpick comes out clean.

  5. Once done, let cool and start making the frosting. Can pick either frosting option or do both and let your guests choose!

    1. To make frosting - simply throw all ingredients into a bowl and mix until combined.

  6. Top banana bars with frosting option of choice or store frosting separately and spread on when you’re ready to eat!

  7. ENJOY :)

Extra Notes:

  • Store on countertop for 1-3 days and then in the fridge so bars stay fresh and yummy!
