Yummy Yogurt Muffins

You won't believe how easy and quickly you can have these yummy yogurt muffins on the kitchen counter, using this recipe!

These muffins are delicious and the added yogurt makes them extra soft and fluffy.

Great option for busy families, to have for quick breakfasts or snacks OR to bring to fun little gatherings!

Servings: Makes 12 muffins (double recipe for larger batch)
Prep Time: 10 minutes
Bake Time: 30-35 minutes
Total Time: 40-45 minutes

Wet Ingredients:

  • 1/2 cup unsweetened greek yogurt

  • 2 eggs

  • 2 tbsp maple syrup (sub for honey if needed)

  • 1 tbsp melted coconut oil


Dry Ingredients:

  • 2 cups whole rolled oats, blended

  • 2 tbsp chia or flax seeds

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • Optional, Option 1: 2 scoops collagen (unflavored or naturally sweetened vanilla flavor)

  • Optional, Option 2: 1 scoop whey protein powder (unflavored or vanilla)

Muffin Topping Ideas:

  • Berry Muffins - add ing 1/2-1 cup berries

  • Pumpkin Muffins - 1/2 cup pumpkin puree + handful dark chocolate chips

  • Apple Pie Muffins - 1/2 cup diced green apple

*If you want to only make one batch of 12 muffins, but want a variety to pick from.. split up the muffin batter into separate, smaller bowls. Next add the different topping ideas (berries, pumpkin, apple), in smaller amounts, to each bowl!

*You can also divide muffin batter into smaller bowls and add in collagen or whey protein (in smaller amounts since batter is split up) to different bowls, to test it out and see if you like the added protein boost!

Then you can get a few of each muffin type ッ

Split batter into two separate bowls…

Berry Muffins (on left) - blended 1/2 batter with berries in food processor/blender

Pumpkin Muffins (on right) - stirred in pumpkin puree and chocolate chips into other 1/2 of batter mixture

Split muffin batter into three separate bowls!

Top Muffin - stirred in collagen protein (1 scoop only since batter is divided)

Middle Muffin - stirred in whey protein (1/2 scoop only since batter is divided)

Bottom Muffin - left as the original muffin batter ッ

INSTRUCTIONS:

Step 1. Preheat oven to 350 degrees F and spray muffin pan with extra virgin olive oil (avocado, coconut, ect work well too!)

Step 2. In a food processor or blender, toss in dry ingredients and blend until mixture is smooth!

Step 3. Once smooth, add the wet ingredients into the food processor/blender and blend mixture again until all ingredients are fully combined.

Step 4. Add in desired muffin topping’s and blend lightly so toppings get stirred into muffin mixture.

Step 5. Spoon out muffin batter into pre-sprayed muffin pan, filling about 3/4 way full. Sprinkle with extra toppings if you like!

Step 6. Bake in the preheated oven until a toothpick inserted in the center of muffin (one with no protein or collagen added) comes out clean, about 25-30 minutes!

  • If you added whey protein - bake time for muffins is only about 12-15 minutes or until muffins are lightly golden, double check by inserted toothpick in center as well!

  • If you added collagen protein - bake time should be similar to that of regular muffins, but double check again by inserting toothpick in center and once it comes out clean or starts to turn golden brown, you’re good to go!
