Lemon Protein Balls

These Lemon Protein Balls will satisfy your sweet tooth and give you that little burst of energy you need! They are a no-bake, sweet & healthy treat for you, your family and friends!

Whether your a busy mama who needs a pick-me-up snack or looking for protein-rich snacks to take to work or have at the house - this is for you!

LEMON PROTEIN BALLS

Made with simple ingredients such as with fresh lemon, chia seeds, maple syrup, almond flour, blended whole oats and an optional collagen + protein boost!

Servings: Makes around 10-12 protein balls!
Prep Time: 2 minutes
Total Time: 5-10 minutes

Wet Ingredients:

  • 2 tbsp pure maple syrup (liquid sweetener)

  • 1/2 tbsp melted coconut oil

  • Juice of one lemon (more or less depending on how “lemony” you want them)

  • Sprinkle of lemon zest


Dry Ingredients:

  • 1/2 cup almond flour (I used Bob’s Red Mill Super-Fine Almond Flour)

  • 1 cup whole rolled oats - BLENDED into flour-like texture (I used Bob’s Red Mill GF Old Fashioned Rolled Oats)

  • 2 tbsp chia seeds

  • Optional - 2 scoops of collagen (unflavored or vanilla - naturally sweetened, for extra protein boost)


INSTRUCTIONS:

Step 1. Blend whole oats into a flour-like texture.

Step 2. Throw dry ingredients into a bowl and stir. Slowly add in wet ingredients to dry and mix together until fully combined.

OR Combine Steps 1 & 2. Throw all ingredients in the bowl of food processor. Blend until mixture is smooth and well-combined, scraping down the sides of the bowl as necessary.

Step 3. Scoop out small spoonfuls (about 2 tbsp) of mixture and roll them into balls. Place in freezer for 30 minutes or so. Then store in glass container in fridge or freezer. (I recommend storing in freezer so they last longer!)

Step 4. DONEEE! Now you have a super quick snack to enjoy that’s not only yummy but also full of all the nutritious things your body will appreciate ッ

Notes: If no whole oats - use 1 1/2 cups almond flour OR if no almond flour - use 1 1/2 cups of blended oats (this may alter texture and consistency a bit. If mixture seems to dry - add more wet ingredients. If mixture seems to wet, add more dry ingredients!

You should be able to easily roll the mixture into balls without them falling apart (too dry) or being too sticky (too wet)
